The oil tank is nothing special. You could use any tank as long as it is of the appropriate capacity. A nice cylinder tank in the same position could be nice. An alternative might be the tank from a TT600, it fits in the space the battery box takes up on the XT. Of course you would have to ditch the ...

Unfortunately it is not a streait swap. Fortunately there are a lot of things in your favor though. The bottom headset bearing is the same internal diameter and height of the XT (only external diameter is larger). This means you can use the XT lower bearing. It is an interesting idea.
For the old XTs, replace your battery with a capacitor and move the regulator. Fit a TT600 oil tank from the same era. This would allow you to use the oil tank space at the back for fuel.
